We’re proud to continue working alongside Newcastle Airport to deliver high quality, guest focused retail experiences for travellers and airport staff across the terminal. We’ve upgraded our dining experience with two more food and beverage outlets. Hunter Coffee Traders opened on 24th February and Sushi Sushi is due to open on 10th March. Both dining outlets are tailored specifically to fit the style and needs of Newcastle Airport travellers and to accommodate the unique crowd passing through. We want everyone to have a choice they can enjoy.
Located immediately after security, Hunter Coffee Traders is designed for the high-frequency rhythm of the terminal. Cater Care knows the drill… Business travellers on a tight schedule need speed, and families wrangling luggage and juggling squirming kids need caffeine as quickly and smoothly as possible without any extra stress. And if that means self-service is the smoothest method for you to coffee-up, Hunter Coffee Traders has that covered with our kiosk.
We don’t sacrifice quality for this speed, either. Our expert baristas deliver a consistent, premium caffeine hit every time. We’ve ensured our layouts keep queues short, supported by a selection of fresh pastries and quick bites. We’re also proud to keep it local, featuring suppliers like Full Throttle BBQ who are showcasing their award-winning smoked brisket in their new pie range. Customers at Hunter Coffee Traders can get a taste of the region before they even set their foot outside the airport or board their plane out.

For those looking for something light and vibrant, Sushi Sushi is due to join the lineup on March 10th. Since 1998, Sushi Sushi has been a staple for Japanese-inspired cuisine on the go, making it a perfect fit for health-conscious travellers and families.
Everything is made by hand each day by sushi artisans. The menu ranges from traditional hand rolls (maki), ships, and nigiri to modern twists like colourful beetroot rice and nutrient-dense quinoa. If you’re after something more substantial, the poké bowls are a win, while the crispy sliders offer a playful, contemporary crunch. It’s fresh, it’s fast, and it’s transparent about dietary needs, and ideal for those looking out for allergens.
Hunter Coffee Traders and Sushi Sushi join our newly opened Novocastrian Taphouse and Cove Kitchen & Bar in January this year.
The Novocastrian Taphouse is designed to embody Newcastle’s proud, energetic soul. Built to mirror the warmth of a favourite local bar, this space offers travellers a familiar and buzzing environment to enjoy prime runway views. The menu champions hearty, high-quality fare that pairs seamlessly with a selection of cold beers and regionally unique wines.
Cove Kitchen & Bar draws its inspiration from the tranquillity of the stunning regional coastline. Designed as a “safe harbour” from the typical airport hustle, this venue provides a more chilled dining experience. The menu features fresh, contemporary Australian cuisine, offering everything from vibrant, seasonal salads to premium sit-down mains. Travellers will find Cove Kitchen & Bar opposite gates 4 and 5 for a quick bite or can linger for a dine-in experience.

Day 1 of opening Cove Kitchen & Bar at 5:22am.
At the heart of these openings is the Cater Care philosophy to customise high quality hospitality experiences to match a specific space and demographic. After all, every space has its own flow, and every demographic has its own tastes.
We specialise in designing hospitality that actually matches its environment. And it doesn’t matter whether the space needs a high-speed coffee hub or a light and airy fresh-food place to sit at a table and relax. We look at the data, the location, and the passenger profile to create a bespoke solution that works for the landlord, the operator, and—most importantly—the traveller.
It’s been a busy season for the Cater Care team and Newcastle Airport. These new dining outlets round out a diverse dining precinct with Bernoulli’s Café & Bar and Crosswinds Coffee Co. Wondering what you can grab at Newcastle Airport? Here’s what we’ve got for you:
